Sugarcane juice in PET Bottles must be a demandable product as there are few units which are producing mango juice, guava juice, mixed juice and orange juice in PET Bottles but not sugar cane. PET Bottles sugar cane juice will fetch the good market as this is a new concept for our country. Preservation is done when Juice or food is kept for longer period without any deteriorated or spoils the juice by the direct contact with atmosphere. Juices are spoiled by decomposition due to aqueous content in the Juice itself and oxygen and other gases plus moisture in the atmosphere. This content provides healthy condition for micro organisms to growth which spoils the food. The oxygen present in atmosphere or air also helps the microorganisms to grow.

Other important possibility of getting the juice spoils is due to the chemical changes brought by atmospheric conditions i.e. Micro organism are produced. The generate gas which spoils the goods oxygen gas itself causes oxidation and hence on set of oxidative rancidity. Also preservation is done to preserve the test and vitamin for a longer period.

There fore sugar cane juice is preserved under canning process for a commercial scale, view of securing good market, when the season of fruit off or where such type of sugar cane brought by other places due to out of production there.

Preservation or canning of fruits on a commercial scale was introduced in the United States of America in 1817 by William Underwood Company of Boston, Mass, who had learnt the technique in London. The civil war in America, and later the Boes war and the Great European war of 1914, with their enormous requirements of preserved foods gave a great impetus to the canning industry. The Second World War provided a further fillip, and the canning industry witnessed unprecedented developments in both technique and scope. At present the variety and range of canned juice are enormous over.
