The beedi manufacturing is a traditional agro-forest based industry in India. It is highly labour intensive, predominantly unorganized and involves three major categories of workers:

•    Forest based tribal workers who collect tendu/kendu leaves;
•    Tobacco growing farmers;
• Beedi rolling home based workers, most of whom are women.

Beedi rolling is done in almost all major states of India and it takes place mainly in the home-based unorganized sector, with sub-contractors playing the main role for the principal beedi manufacturers. There are about 300 major manufacturers of branded beedis but there are thousands of small-scale manufacturers cum contractors who
account for the bulk of the beedi production in India1. Government estimates of the total number of beedi workers is about 4.5 million2, majority of who are home based women workers. Trade unions claim that there could be about 7-8 million beedi workers in the country, especially if those engaged in beedi trade and the tendu leaf collection are also taken into account.

Stevia is a perennial shrub that extensively grows in places like Brazil, Central America and Israel but is native to Paraguay. The genus Stevia belongs to Asteraceae family, tribe Eupatoriae and comprises of 240 species. This plant grows mostly at the altitude of 500 - 3000 m above sea level in semidry mountainous terrain. Different species of Stevia contain several potential sweetening compounds; Stevia rebaudiana (Bertoni) is the sweetest of all. For centuries this herbal sweetener has been used in native cultures to counteract the bitter taste of various plant based medicines and beverages. Nowadays the extraction of sweeteners from stevia leaves is a growing industrial and commercial worldwide sector; more than 750 tons of stevia leaves per year are used as crude extract for consumption and extraction of glycosides. The sweetening property is associated with their contents of several glycosides, stevioside, steviobioside, rebaudiosides A to F, dulcoside A and steviol. These glycosides and their derivatives are known to account for 4% - 20% of the dry weight of stevia leaves.

PAPAIN INDUSTRY

A common enzyme known as papain is obtained from the green papaya (pawpaw) fruit. Enzymes are proteins that can increase the rate of biological changes such as the ripening of fruit. At the end of an enzyme catalysed reaction the enzyme itself is unchanged and is able to react again. Enzymes can be generally recognized by the ending -ase. This either indicates the nature of the substance affected by the enzyme (e.g. carbohydrase acts on carbohydrate material and proteases acts on proteins) or to indicate the nature of the reaction e.g. transferases catalyse the transfer of atoms or groups of atoms within a substance.

Papain have got good market in India and export demand. Papain is obtained from young papaya fruit and has importance in agro-food industry. The latex contain 5 enzymes in which papain is important. Papain production is huge profitable because from papaya you can harvest papaya fruits for marketing and papain obtaining is become a side business. For exporting crude papain an airtight can is used. But papain powder is more preferred for exporting and it can be pack in polythene bags. These bags are pack in fibre drum. These fibre drums are stored at 5-90C in cold storage. For exporting, packing of 5,10,20,25,and 50 kg are prepared. Global papain market is segmented by end-use industry and by region. Papain is an endolytic cysteine protease enzyme found in papaya latex. By end-use industry, the global papain market is sub-segmented as food & beverages, cosmetic, textile, pharmaceutical, other industries such as detergents, tanning, optical, photographic, etc. Among these, the pharmaceutical segment is expected to contribute to the significant revenue share with a relatively high growth rate over the forecast period in global papain market. Papain is being used in the brewery industry as well. Papain is also being used in the leather industry in the fur and hide tanning. It is also being used as a clarifying agent in the food industry. A pharmaceutical segment follows food & beverages segment with a relatively high growth rate concerning both value and volume in the global papain market.
