					<description><![CDATA[<p style="text-align: justify;">    Ground Nut Powder otherwise known as peanut oil, arachis  oil, or earthnut oil, is one of the two or three most important edible Oils in (oil content 45-55%) of the plant arachis  hypogaea, which is grown in large quantities is Africa, India and china. The oil is pate yellow and has the characteristic order and flavour of peanuts. Compared with other seed oils, particularly cottonseed oil, it is relatively free of phosphatides and nonoil constituents. Groundnut oil is used mainly for edible purposes in the preparation of shortenings, margarines, and mayonnaise and as a cooking and salad oil of pharmaceutical quality is obtained from the seed by cold expression. The B.P recommends its use as a substitute for olive oil in making ointments, liniment its, plasters and soaps. Its use is authorized in preparations such as solutions of vitamin A and D Groundnut oil is considered to be an  aperients and an emollient. In veterinary medicine, it is used as a nutritive laxative and emollient. It has been employed  in the form of an emulsion for the control of several insect  pests of plants.</p>

					<description><![CDATA[<p><strong>   Frozen Foods &#38; Vegetables :</strong></p>
<p>It  was claimed in 1968 that there were 2823  types  of frozen  foods,  including  639 types of  frozen  vegetables,  446 frozen deserts, and 448 types of frozen sea-food .  It is further stated that 58% of the volume of frozen foods is fruit juices and vegetables.  It is also said t`at forzen soups account for  11.4% and  baked goods for 10.1%. Before freezing, it is  necessary  to blanch the product to destroyenzymes, which would result in  off-flavors and consequent quality deterioration.  Rapid freezing  is important, since just as with ice cream, it results in a smoother product  having smaller ice crystals and a more natural body  and<br />
texture.</p>

					<description><![CDATA[<p style="text-align: justify;">
Honey  is  a  part of bees, which  gather  sugar  containing nectars  form flowers.  An enzyme introduced by the bees  to  the gathered  nectars result in honey, which  contain invert  sugars, in  the form of dextrose &#38; levulose to the extent of approx.  75% of its total weight which makes it very sweet.</p>
<p>Honey  is  used  as a flavouring agent in  honey  cakes  and gateaux.  Its flavour which is distincture, varies with the  type of   vector.    The   different  flavours  is   the   result   of characteristic  aroma  of  flowers form  which  the  nectars  are gathered.   It is the comb-honey that  is stored by the  bees  in the  cells of the wax honey comb.  Honey removed form  the  honey combe  is  by centrifugal force and thus honey  called  extracted honey.</p>

					<description><![CDATA[<p style="text-align: justify;">
Asafoetida  of commerce is available in three  forms,  viz.. `tears',  `mass',  and  `paste'.  The  `tears'  constituting  the purest  form of the resin, are rounded or flattended, 5-30 mm  in diameter and greyish or dull yellow in colour.  The two types are recognised  according  to whether the tears retain  the  original pale colour for years or gradually become dark or reddish  brown.</p>
<p>Mass  asafoetida is the common commercial form.  It  consists  of tears agglutinated into a more or less uniform mass usually mixed with fragments of root, earth, etc.  The paste form also contains extraneous matter.</p>

Sausages,  Solomies,  Ham,   Bacon  and  chicken   loaf  are gaining  eminence in modern times and their demand is  increasing considerably.</p>
<p>Among  Sausages, there are chicken sausages, Pork  sausages, etc among other varieties are fresh whole Hog sausage,  condition park  or  breakfast  sausage,   chinese  sausage,  Italian   park sausage,  skinless  polish sausage, semidry or  summer  sausages, cervelat, Lebanon Bologna, chorizos, etc.</p>
<p>Among  the  above  "Semidry or Summer  Sausages  are  coarse ground,  termented products requiring considerable  knowledge  of the  art. They can be prepared using starter cultures  comparable to  those used in the cheese industry, or they can be held  under specific  conditions that preferentially promote the   growth  of organisms   that   impart  flavor,  texture,   and   preservative qualities.  Bacterial fermentation lowers the pH to 4.6  to  5.2. Dextrose  (glucose) is added to the meat mixture as  a  substrate for  acid production, since sucrose and other complex sugars  are not readily utilized  by the bacteria during fermentation.</p>

ALCOHOL</p>
<p>The  term alcohol was first applied to the spirits of  wine, ethyl  alcohol, and now it refers to a series of substances  with similar  characteristics Ethyl alcohol is the active  constituent of  all  intoxicating  liquars obtained by  the  fermentation  of saccharine  materials.   It is present in the form of  esters  in several  volatile  oils.  It is now a days  prepared  in  immense quantities, chiefly by fermentation and finds numerous industrial uses, and is also being used as a motor fuel.</p>

					<description><![CDATA[<p>The  urgency for the development of  nutritionally  balanced protein  foods which would be within the reach of  a  substantial portion  of the population in a country like India can hardly  be over-emphasized.</p>
