The genus includes about 48 species, of which C.Papaya (carica) is the most important and best known. It is cultivated newly all over the tropical and sub-tropical regions of the World for its luscious fruits. It is the source of commercial papain. Among the other species, C. Candamarcensis and C. quereitolia are of some importance as possible breeding materials for inducing frost - resistance in cultivated papaya.
Varieties

`Washington', `Honey Dew' (Madhu Bindu) `Coorg Honey Dew', `Singapore' C.O.I. an improved strain of the Ranchi type has been evolved at Coimbatore. The varieties do not remain pure under the existing state of cultivation and give rise to variations, both in tree and fruit characteristics.

Their demand is increasing considerably and they have prosperous future prospects.

A common enzyme known as papain is obtained from the green papaya (pawpaw) fruit. Enzymes are proteins that can increase the rate of biological changes such as the ripening of fruit. At the end of an enzyme catalysed reaction the enzyme itself is unchanged and is able to react again.

Enzymes can be generally recognized by the ending -ase. This either indicates the nature of the substance affected by the enzyme (e.g. carbohydrase acts on carbohydrate material and proteases acts on proteins) or to indicate the nature of the reaction e.g. transferases catalyse the transfer of atoms or groups of atoms within a substance.
