Fisheries are one of the most significant renewable resources that Indian Ocean (IO) countries have for food security, livelihoods and economic growth. Fish processing is must because fish is highly perishable and thus, requires preservation and proper handling, so that the end product can have nutritional quality and longer shelf life. Efforts however, need to be made to ensure that as the population in these countries grows, and demand for food and employment likewise grows, the benefits that fishery resources provide, are protected through sustainable management and value-addition. Fish processing involves a primary step and a secondary step. Primary processing involves cleaning, sorting, freezing and packaging of fish. Secondary step processing involves creation of processed fish and seafood for meal components or ready meals.
