   Sago is a processed edible starch available in the form of small  globules like pearls or flakes and is valued as  food  for invalids  and infants.  The name sago is derived from sago palms (metroxylon spp.) from which it was originally manufactured in  Malaysaiand  Indonesia.  Tapioca (Mani hot esculenta) and Potato Starches are now the major sources of sago, and palon starch sago is produced only in Indonesia in small quantities. Sago is produced from tapioca in a number of Countries including Malaysia and India, and from Potato and Sweet Potato Starches in  Germany and Japan.

The production of Sago from tubers was started during world war II, when palon sago was no longer available.

In Germany Sago was produced from Potato Starch while in India tapioca (cassava) starch was utilized for this purpose.   But Potato contains starch.  It can be used for production of starch and from starch sago can be manufacture.
